Why A2A2 Milk is Better

In the not-too-distant past, all dairy cows exclusively produced A2 milk. After domestication and years of breeding, a DNA mutation occurred that led to A1 milk. But it's A2 milk that is produced by all mammals, humans included, making it a closer match to what is naturally intended for human consumption.

A2 milk has higher amounts of omega-3s and CLA’s, is easier to digest with fewer uncomfortable side effects, and contains heart healthy fats. Several studies have also shown that A2 proteins have superior metabolic and cognitive benefits.

The milk that makes our ice cream is from a small group of exceptional farms in New York, where the cows are known by name, and each one is lab tested and confirmed to produce only A2 proteins.

What Motivates Us

It's impossible to find ice cream without factory farmed grain-fed A1 dairy, refined white sugar, skim, gut irritating gums and fillers, seed oils, and ultra processed artificial ingredients. This kind of ice cream is not compatible with human health. We started Goodness Dairy to make the kind of ice cream we wanted for ourselves and our families. Ice cream made with nourishing, nutrient dense real food ingredients that humans have been consuming and thriving on for thousands of years.

  • Where does the milk that makes Goodness ice cream come from?

    We source all of our milk from small family farms upstate New York. The farms are all certified organic and certified regenerative. The cows are A2A2 and 100% grass-fed. The milk we use in our ice cream is truly exceptional.

  • Why does 100% grass-fed milk matter?

    Being 100% grass-fed means our cows consume only grass and never grain, which is the main feed on conventional dairy farms.

    For centuries, cattle thrived on grass pastures, extracting nutrients from the stems while the seed heads passed undigested through their intestines, returning to the soil with natural fertilizer (cow manure), ready to grow again. This created a symbiotic relationship between the cows and the land.

    Over time, however, cows have been removed from pastures and confined to barns, where they are fed high-energy diets to maximize milk production. While this system boosts efficiency, we believe it comes at the cost of milk quality and animal well-being.

  • Why does certified regenerative matter?

    Regenerative agriculture encompasses holistic farming and grazing methods that actively improve and restore the land and its resources. These practices offer numerous benefits, including the restoration of soil health (soil organic matter), enhanced crop resilience and nutrient density, and greater land productivity and biodiversity. Collectively, these advantages contribute to essential ecosystem services and ecological processes such as the water cycle, carbon sequestration, nutrient cycling, nitrogen fixation, and natural pest control. The aim is to cultivate nutritious, high-quality food while simultaneously supporting the health of the environment, ecosystem, farmers, and communities.

  • Why does USDA certified organic dairy matter?

    Organic dairy ensures higher milk quality, improved animal well-being, and reduced chemical exposure while supporting sustainable farming practices that benefit the environment. Being certified organic dairy means that a dairy operation meets strict standards set by an organic certifying body, such as the USDA National Organic Program (NOP) in the United States. These standards ensure that milk and dairy products are produced in ways that promote environmental sustainability, animal welfare, and food purity. Key Requirements for Certified Organic Dairy: 100% Organic Feed – cows must be fed organic pasture and organic supplemental feed (if used), free from synthetic pesticides, herbicides, and genetically modified organisms (GMOs). Access to Pasture – cows must graze on organic pasture for at least 120 days per year, with at least 30% of their diet coming from fresh pasture during the grazing season. No Synthetic Hormones or Antibiotics – the use of growth hormones (rBST/rBGH) are prohibited, and antibiotics are not allowed for routine treatment. Sick animals must be treated, but their milk can no longer be sold as organic. No GMOs or Synthetic Additives – organic dairy must be free from genetically modified organisms, artificial preservatives, colors, or synthetic processing aids. High Animal Welfare Standards – organic standards require humane treatment, including sufficient space, outdoor access, and conditions that support natural behavior. Environmentally Sustainable Practices – organic farms must implement soil and water conservation methods, avoid synthetic fertilizers, and promote biodiversity.

  • What is A2A2 and why should I care?

  • Where is Goodness ice cream made?

    Our ice cream is made from scratch in small batches upstate New York in a certified facility.

  • Is your ice cream pasteurized?

    Yes. All of our dairy is low-temp VAT pasteurized and the eggs in our ice cream are all pasteurized.

  • Why is the milk Goodness uses to make ice cream low-temp VAT pasteurized?

    Pasteurization is the process of heating milk to eliminate potentially harmful microorganisms. Different pasteurization methods use varying temperatures and time durations, with modern techniques favoring higher temperatures and shorter hold times to maximize efficiency. However, these high-heat methods compromise nutritional benefits, as they damage fat-soluble vitamins and protein structures, reducing their bioavailability and nutritional benefits. We are committed to preserving the integrity of our ice cream by using the gentlest pasteurization methods — lower temperatures and longer hold times to retain nutrients and ensure the highest quality product. Though less efficient, VAT pasteurization is the best method for maintaining milk’s natural nutritional profile. In contrast, higher-temperature methods degrade fat-soluble vitamins and protein chains, making their absorption difficult, if not impossible.

  • Goodness ice cream has a lot of fat; is it healthy?

    Contrary to popular belief, whole milk — rich in natural fats — is highly beneficial for the body, especially when sourced from certified organic and regenerative 100% grass-fed A2A2 cows! Packed with fat-soluble vitamins A, E, and K, along with higher levels of Omega-3s and conjugated linoleic acids (CLAs), this healthy fat supports heart health and may offer cancer-fighting properties.

  • Why is Goodness always pointing out that it contains no skim?

    Did you know that skim is very successfully used to fatten pigs before slaughter? Gross!! Since the post-WWII era there has been a strong push to promote skim as healthy (skim is a byproduct of various dairy production like butter and cheese). However skim confuses the body, often leaving people unsatisfied and leading to increased overall calorie consumption, insulin spikes, and inflammation. Yet, the profitability of marketing and including skim in dairy products like ice cream has proven too tempting for some dairy processors to ignore. Choose Goodness ice cream contains no skim; just cream and milk!!

  • Why is Goodness ice cream more expensive than most other ice cream?

    It's the highest-quality nutrient dense ingredients and small-scale production that contributes to the higher cost of Goodness ice cream. Organic and regenerative 100% grass-fed A2A2 milk is by far the most expensive on the market. And we use a lot of milk because our ice cream contains only cream and milk (no skim!). The use of high-quality organic and pastured corn and soy free egg yolks and organic maple sugar further increases the price. The small batch artisanal production also results in higher labor costs.

  • Does Goodness Dairy ship ice cream?

    Yes! We are currently shipping to the continental United States.

  • How is the ice cream shipped?

    Each order is shipped in an insulated cooler, packed with dry ice. This ensures your ice cream arrives fresh, frozen, and safe. Similar to when you buy ice cream at the supermarket and take it home, it's possible that a portion of your ice cream may not be completely frozen solid, especially when the weather is very warm; if this is the case immediately transfer it to the freezer.

  • Do I need to be home to accept my delivery?

    We ship with signature release so you do not have to be home to receive your order. But please make sure that you move your ice cream into the freezer as soon as possible!

  • When do you ship?

    We only ship Monday through Wednesday. This helps ensure orders make it to customers as quickly as possible and that customers are able to receive on the day of delivery.

  • Why is shipping so expensive?

    There's no way around it; frozen shipping is expensive; special packaging like insulated boxes and dry ice are necessary to maintain frozen temperatures and protect your ice cream during transit. Frozen shipping also demands shorter delivery times which are more expensive. The actual cost to ship your ice cream actually exceeds what we charge for shipping!!

  • Do you accept returns?

    No, unfortunately we are not able to accept returns. If you are experiencing an issue with your ice cream contact us and we’ll do our best to make it right.
